Baked Chocolate Donuts

Ingredients
  • 7/8 cup unbleached flour (1 cup minus 2 tablespoons)
  • 1/2 cup sugar
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp instant coffee
  • 2 large eggs
  • 3 Tbsp vegetable oil
  • 2 Tbsp milk
Directions
  1. Heat oven to 375. Grease a donut pan.
  2. Whisk dry ingredients in one bowl.
  3. Beat eggs together in another bowl. Whisk in oil and milk
  4. Blend wet ingredients into dry. The batter is thick, somewhere between muffin and cookie dough.
  5. Spread evenly in donut pan. (I got 10 out of 12 openings filled but I didn't try to re-distribute the batter.)
  6. Bake 12-15 minutes or until a toothpick inserted in the center comes out clean. Serve glazed, dipped in butter and powdered sugar, or plain.
Basic Cocoa Glaze
Mix 1 cup powdered sugar, 2 Tbsp cocoa powder, and about 2 Tbsp milk until smooth. Drizzle over donuts or pour into a shallow bowl and dip the tops of the donuts.
