- 7/8 cup unbleached flour (1 cup minus 2 tablespoons)
- 1/2 cup sugar
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1 tsp instant coffee
- 2 large eggs
- 3 Tbsp vegetable oil
- 2 Tbsp milk
- Heat oven to 375. Grease a donut pan.
- Whisk dry ingredients in one bowl.
- Beat eggs together in another bowl. Whisk in oil and milk
- Blend wet ingredients into dry. The batter is thick, somewhere between muffin and cookie dough.
- Spread evenly in donut pan. (I got 10 out of 12 openings filled but I didn't try to re-distribute the batter.)
- Bake 12-15 minutes or until a toothpick inserted in the center comes out clean. Serve glazed, dipped in butter and powdered sugar, or plain.
Mix 1 cup powdered sugar, 2 Tbsp cocoa powder, and about 2 Tbsp milk until smooth. Drizzle over donuts or pour into a shallow bowl and dip the tops of the donuts.
